Soup
- 1 kg (2.2 lbs) of chicken
- 2-3 carrots
- 3 parsley roots
- 2 parsnip roots
- 1 medium onion
- 1 celery stick (or celeriac) or fennel
- water
- salt
- peppercorns
- 2 chicken-flavored cubes
- fresh parsley
Dumplings
- 3 medium eggs (~160 g / 5.6 oz) weighed without shells
- 1/2 teaspoon salt (or to taste)
- 160 g (5.6 oz) semolina (same weight as the eggs)
1. Put the ingredients for the soup in a large pot and cover with water.
2. Simmer for ~45 mins or until the chicken is cooked.
3. Remove the ingredients and strain the soup through a sieve.
3. Form the dumplings and place them in the soup.
4. Simmer for ~15 mins or until the dumplings are cooked.
5. Chop fresh parsley and add at the end.
