Soup

  • 1 kg (2.2 lbs) of chicken
  • 2-3 carrots
  • 3 parsley roots
  • 2 parsnip roots
  • 1 medium onion
  • 1 celery stick (or celeriac) or fennel
  • water
  • salt
  • peppercorns
  • 2 chicken-flavored cubes
  • fresh parsley

Dumplings

  • 3 medium eggs (~160 g / 5.6 oz) weighed without shells
  • 1/2 teaspoon salt (or to taste)
  • 160 g (5.6 oz)  semolina (same weight as the eggs)

1. Put the ingredients for the soup in a large pot and cover with water.

2. Simmer for ~45 mins or until the chicken is cooked.

3. Remove the ingredients and strain the soup through a sieve.

3. Form the dumplings and place them in the soup.

4. Simmer for ~15 mins or until the dumplings are cooked.

5. Chop fresh parsley and add at the end.
